On a forum I saw someone describe a variant where they included Martel.
They also made Lannisport inaccessible and they placed a 5 neutral force on Riverrun.

I played IRL the normal way and Bara won because he could take the south thanks to an inactive Tyrel.

What do you think of this setup?

Sounds like a variant worth trying. 5p and 4p games with a 2nd ed. rule set are deeply imbalanced, imho.

Perhaps it makes even more sense if GS is inaccessible as well in such a scenario.

You're right. Golden Sound would make pyke too easy to defend.

Someone from our group tbought it would be better to remove Greyjoy. But I think Stark would have an easy win(especially with Bara occupied with Martel
in a 4p or 5p match (2nd ed.) we always played without Greyjoy and making Pyke not conquerable. Match are always more balanced. In a 4p, without Martell and GJ, Sunspear is not conquerable too.
