The problem with going straight for Starfall is that it creates a gamble that Martell can afford to lose more easily than Tyrell can.  You can only guarantee victory by using Mace, and if Martell counters by using Doran to move you below on fiefdoms then it compounds our weakness at sea (along with losing your strongest card and him his weakest).  If it's Arianne, you kill a footman but have no territory to show for it.  Even if it Nymeria or a 2, it doesn't make for a very good trade when the Viper can still hit back and your best defensive option is Loras, himself an offensive specialist.

Even if things go well, and you manage to kill a footman without losing too much in the house card trade, you still have to rely on catching a Muster or at the least a Clash in order for your victory to produce a real benefit to you.  Otherwise you have a pretty castle, with no good way to protect it or your vulnerable sea area.
